Last week I made the Coronation Quiche after seeing the recipe on TV. It was tasty, easy to prepare , suitable for vegetarian guests and didn’t cost much to make. However, we prefer Quiche Lorraine and that is what we are having for lunch today.

I lovely a good quiche , as has already been said delicious with salad .
They freeze well too.

ie: cheese and onion

My friend’s daughter made us a “Coronation” Quiche for a meal she prepared for our return from holiday on the Sunday after the Coronation - as my friend is coeliac, she made a gluten-free version of it. We ate it with a delicious home-grown salad and home-made coleslaw.
She also made some delicious desserts plus a gluten-free Coronation Cake, topped with cream, raspberries and blueberries, for the “red, white and blue” effect.

It was a lovely, thoughtful surprise - after our Coronation Supper and a few glasses of Prosecco to toast the occasion,, we settled down to watch the Coronation Concert from Windsor.
